Tilapia is the go to fish in Kenya. They are abundant in Lake Victoria in the Western part of Kenya. If you go somewhere and see Samaki (Swahili for Fish)on the menu you can expect it to be Tilapia unless it is specified otherwise. There are many different ways it is eaten but my favorite is just deep fried.
You can purchase the fish fried as I did in the case above. This size ran me about 400 kshs ($5).
I then blanched some Potatoes then pan fried them in Ghee (clarified butter and my favorite cooking oil atm) with powdered black pepper, and garnished it with some cilantro and tomato chunks.
