This post will include 2 dishes. I had previously tried cooking wings directly in the oven but this was a first with Tenders. Some notes will be included.
Tenders soaked in buttermilk for a few hours. Breadcrumb mix with some added herbs. Well whisked eggs. Some flour and paprika. The assembly line can be somewhat cumbersome but I do find the process enjoyable, if I have the time.
Your tools can make a big difference. I did not have a proper wire mesh for the oven, and may have overcrowded the layout. I believe this reduced air circulation disrupted the cooking process leading to tenders that were not as crunchy as I would have hoped.
If you have at least 10 wings, try 2 different flavours.
