This post is of the first Lasagna I made. Well the first successful one as the post is from the morning after I tried making one which due to my attempt to save broth, used an open carton that was past its sell by date. I found this out after baking the thing, and Rocco and I sadly threw out a whole tray :/
Well as depressing as finding that out was, I woke up early the next day and went back to the store to purchase replacement ingredients. Having never made Lasagna I used this recipe Broccoli Chicken Lasagna as the base and made some personal adjustments.
I usually cook for one (myself) so crashing with Rocco was a good opportunity to try this as some foods tend to be made in large servings. I may try for mini single or shared serving lasagnas next time.
The picture above is the main ingredients. Chicken breasts were lightly marinated, cubed and mixed with parsley. Fresh Broccoli heads instead of frozen and Mushrooms added to the onions. Mushrooms and cheese make everything better. Everything.
Cheffin it Tip : When making the sauce, make sure you stick to the amounts listed. You are better off going above the suggested measurements. Adding the Mushrooms to the recipe proved to be a small challenge when it came to getting a good consistency.
Used oven-ready Noodles for the pasta, they are somewhat of a challenge to cut without breaking in order to fit the tray. You can be very sparing with the ground layer of sauce. Make sure you have enough for the 3 subsequent layers. You are looking at a 1:3:3:3 split from base to top out of 10
If you do not have a baking dish I suggest folding the aluminium tray to better fit the contours of the lasagna. It also lets you pile the contents on higher. More cheese. More chicken. More Mushrooms. Yay.
After removing it from the oven, you will need to let it sit for 15 minutes before cutting it.
A long 15 minutes when you see the cheesy goodness and smell the delicious aroma.
We both cut out some hefty slabs. It was delicious.
As delicious as Lasagna is it is also heavy, so eating too much at once is unadvisable even if possible. Having a cold slice for lunch the next day is delicious and almost a requirement.
