Appetizer – Eggplant Mozzarella Roll

Main Ingredients

2 Mozzarella

2 Eggplant

1 puff pastry

eggplant mozzarella

Other Ingredients:

Oil

Salt

Preparation: 

Cut your egg plant keeping thin and even circles.

Then grill your eggplant adding a little bit of salt. Do not add oil, otherwise your perfect egg plant circles will probably break.

Your eggplant should look like this!

After this cut in thin and small circles your Mozzarella.

Get your puff pastry. Lay it down, and add your eggplant circles and then your mozzarella. If you like prosciutto di parma you could add this before the mozzarella. Remember! Mozzarella needs to be the last ingredient since it will melt and give a nice texture to your roll.

Once you are done adding all the ingredients add a little bit of oil over everything. Close your roll!

At the end you should get a roll looking like this!

Cooking:

Cook  your roll for 35 minutes on a preheated oven at 180 C or 350 F

Conservation:

You can keep your roll in the refrigerator for one day in an airtight container. Or you can freeze it.
